Vincent exclusively employs indigenous yeast during fermentation, uses minimal new oak, and bottles his white wines with low levels of SO2 and without filtration.
The Bourgogne Blanc Côte d'Or is a crystal-clear Chardonnay sourced from three estate vineyards in Meursault: "Sous la Velle" (part of which is classified as Meursault village), "Les Pellans," and "Les Grandes Coutures." The vines, which are aged between 50 and over 70 years, are deeply rooted in fertile soils composed of limestone scree and clay.
